This post is to show that not ALL things I make are perfect. Haha, I'm just
teasing. Kind of. Anyways. This is a recipe I found a while back on how to
make a homemade chicken parmesan. The guy who had the recipe bragged and
bragged on how fantastic this stuff was. I must have done something wrong
because this mess was not that great. It definitely wasn't an "oh-my-goodness-
I-cannot-wait-to-share-this-with-everyone-else" moment. But. Here I am,
showing it to you.
For this chicken parmesan, I just cooked a few chicken breasts in a pan with a
bit of EVOO and seasoning on top. Once it's cooked through, I diced/shredded
the chicken. Layer chicken over a small layer of tomato paste/cottage cheese
mixture. Continue to layer these until you've filled half of your casserole dish.
At this point, your top layer should be chicken. Add a few good dashes on garlic
salt seasoning and then a layer of the tomato paste/cottage chese mixture. On top
of that, add a thick, put evenly placed, layer of parmesan garlic croutons.
To top it all off, add layer upon layer of shredded mozzerella and parmesan
cheeses. For good measure, add another few good dashes of garlic salt seasoning.
Then a bit of the parmesan sprinkles. Bake in the oven for 25 minutes at 350 DF
but make sure to watch for browning cheese, that is a good sign of when the dish
is ready to be taken out to cool.
